A Pecorino obtained from a strictly manual harvest in September, from certified organic agriculture, which ensures the utmost respect for the surrounding environment. Manual selection of grapes, harvested from old vineyards of Ancarano and Controguerra with optimal exposure and medium-low yield. The terroir gives the grapes the best thermal excursions that, together with organic techniques of cultivation, enhances the typical flavours of Pecorino grapes. Fresh and rich in minerality and persistence. The vinification is carried out in thermo-conditioned steel vats, followed by a refinement of 2 months, in cement tanks, and then filling in the total absence of oxygen.
